Amino acid analysis and physiological properties of protein concentrate made from Black Soldier Fly Larvae (Hermetia illucens)

Abstract Food waste continues to increase as the population increases. The buildup of food can cause environmental pollution and imbalance in system. With potential for various problems that be caused by animal husbandry activities, use Black Soldier Fly (BSF) larvae is expected helping organic decomposition, well becoming an alternative protein source. Therefore, this study aims amino acid profile quality concentrate produced from BSF. BSF larvae, content, foaming capacity stability, emulsion stability made were determined. Based on results study, it was found contains complete essential acid. Furthermore, also 79.94 ± 0.49%. has a good ability forming maintaining foam, but poor if compared bovine serum albumin.
